Salmon are anadromous fish, meaning they hatch in freshwater, migrate to the ocean to grow and mature, and return to freshwater to spawn. They are known for their pink or reddish flesh due to the carotenoid pigments astaxanthin, which they obtain from crustaceans. Several species exist, including Atlantic salmon and Pacific salmon.
